Oxidation occurs when a wine is exposed to air, typically through a dried out or faulty cork seal that has allowed air to get into the bottle. The signs of oxidation are a dulling and browning of the wine's color (just as apples turn brown when their flesh is exposed to air), and a loss of freshness and vibrancy to the fruit taste.
